Rabbit Hole Whiskeys, Gin

New to Louisville’s urban bourbon trail, Rabbit Hole Distilling has launched distribution in Illinois, Kentucky and Tennessee. The company plans further expansion into new markets soon, including Wisconsin, Indiana, Georgia, New York and more.

Founder and whiskey maker Kaveh Zamanian left his practice as a psychoanalyst to followed his passion for spirits, the company says. He saw opportunity to “modernize the industry” with new mash bill combinations. The initial Rabbit Hole line includes:

  • Kentucky Straight Bourbon Whiskey: 70% corn, 10% malted wheat, 10% malted barley, 10% honey malted barley. Begins with fruits and grains, mid-palette has flavors of wheat and grass and finishes with taste of vanilla, honey and almond. 95 proof. Suggested retail price: $49 per 750-ml. bottle. 
  • Kentucky Straight Rye Whiskey: 95% rye, 5% malted barley. Begins with dried apricot and fig, mid-palate has notes of custard and caramel and finishes with subtle notes of spicy fennel. 95 proof. SRP: $59 per 750-ml. bottle.
  • Straight Bourbon Whiskey Finished in PX Sherry Casks: 68% corn, 18% wheat, 14% malted barley. Subtly sweet notes of vanilla and red fruit. 93 proof. $79 per 750-ml. bottle.
  • Kentucky Rye Barrel-Finished London Dry Gin (coming soon). Begins with licorice, mid-palate lemongrass and fennel, and finishes with a taste of creamy butter. 89 proof.

Rabbit Hole will open open a “state-of-the-art distillery” in late 2017/early 2018 in Louisville.
