Neversink Spirits, the craft spirits producer based in Port Chester, New York, has announced a move to a 100% NY-state apple base for its flagship spirit, Neversink Gin.
Originally the production was 50% grain and 50% apple.
Apples for Neversink Gin are sourced from an orchard in New York State. The apple-base spirit is macerated with juniper berries for 24 hours before being distilled with eleven different botanicals. These include juniper, coriander, cardamom, star anise, cinnamon, orris root, angelica root, elderflower and fresh orange, lemon and grapefruit peel.
The result is a gin with a warm baking spice and notes of fresh citrus accenting the apple base, the company says.
The suggested retail price is $45 per 750-ml. bottle.
