Don Papa Rum Sherry Cask Finish

Don Papa Rum, a craft rum from the Philippines, has added a new expression to its portfolio: Sherry Cask Finish.

Don Papa Rum Sherry Cask Finish is distilled on the island of Negros – just like Don Papa 7 and 10 Year – where the volcanic soil and tropical climate allow for Noble Cane, the original species of sugar cane high in sucrose, the company says.

Produced from molasses and column distilled in Bago, Don Papa Sherry Cask Finish first ages for four years in American oak ex-bourbon casks, followed by 18-24 months in four different types of sherry casks: Fino, Pedro Ximenez, Palo Cortado and Cream.

Rums from these four casks are then blended together. The final expression — at 45% ABV — has a range of flavors such as plum, dark chocolate and ripe figs, the company reports.

“The complex flavors and textures brought upon by the blend of these different Sherry Casks bring another dimension to Don Papa,” says Stephen Carroll, founder of Don Papa Rum. “It’s distinctive and full bodied but has a delicate sweetness, lovely notes of plum, dark chocolate and ripe fig that make for an unparalleled drinking experience.”

Sherry Cask Finish also features a new baroque-inspired design, reflecting aspects of the island’s Spanish heritage whilst keeping the irreverence of Papa Isio’s story, originally a foreman in a sugar plantation turned revolutionary who battled for his country’s independence. 

Don Papa Rum Sherry Cask Finish is available nationwide in limited quantities for a suggested retail price of $69.99 per 750-ml. bottle.
