Widow Jane Distillery has announced the release of The Vaults 2021.
This is the third edition in an extra-aged whiskey series from the New York-based company.
The 2021 release blend two bourbons — aged 15 and 17 years, from Tennessee and Indiana — selected by Widow Jane President and Head Distiller Lisa Wicker. She picked these whiskeys from among the brand’s stocks at its Conover Street rickhouse in Red Hook, Brooklyn.
Around 3,000 bottles of Widow Jane The Vaults 2021 will release to the public. It launches in select markets this fall and winter.
Bottled at 99 proof, the 2021 release has a nose of caramel, toasted coconut, cocoa powder, leather and vanilla, the company reports. The palate is toffee, popcorn, pecan, graham cracker and sweet tobacco, before a finish of clove, burnt sugar and all-spice.
The 2021 blend finished in Adirondack oak casks air-seasoned outside for 42 months.
After the air-seasoning, the casks were put together in a traditional French method, a tighter construction than the American oak from the original aging period, the company says. The casks received a heavy toast, with a three-and-a-half level char.
As with all Widow Jane whiskey, The Vaults 2021 is non-chill filtered and proofed with the limestone mineral water from the Rosendale Mines of New York, 100 miles north of the distillery.
“Blending these older barrels for the Vaults is a privilege,” says Wicker. “They are mature and beautiful on their, own but are elevated when combined. Influencing them with extraordinary oak creates a one of a kind combination. Pour slow and let it open up.”
The suggested retail price for Widow Jane The Vaults 2021 is $225 per 750-ml. bottle.
