Redbreast Irish Whiskey has unveiled the first limited-edition release from its Iberian Series collection.

Redbreast Pedro Ximénez Edition is a single pot still Irish whiskey. It was triple distilled, and initially matured in former bourbon and oloroso sherry casks re-casked into Pedro Ximénez Hogsheads from the southern tip of Spain, for 12 to 22 months.

Half the size of a standard sherry cask, the increased surface area of the hogshead intensifies the flavor contribution from the Pedro Ximénez-soaked wood, the company reports. This imparts notes of treacle, raisins and orange zest, due to the sweeter grape variety used in the sherry. Aromas include fruit, spices and toasted nuts.

“It gives me great pleasure to introduce the Redbreast Pedro Ximénez Edition to the U.S. as the first release of the Iberian Series,” says Redbreast Master Blender Billy Leighton. “The collection will add new and unique flavors to the Redbreast portfolio for whiskey drinks to discover, with whiskeys finished in casks sourced from the sun-drenched bodegas of Spain and Portugal, suffused with the natural warmth and sweetness of the Iberian Peninsula.”

Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition is bottled at 46% ABV, and without chill-filtration. It is now available in select markets nationwide for an $95.99 suggested retail price, per 750-ml. bottle.

The Iberian Series collection is meant to celebrate Redbreast’s connection to Iberia’s and Ireland’s heritages.
