The four new releases of Thomas S. Moore extended-finish bourbons are: Cognac, Madeira, Sherry and Merlot.

Barton 1792 has extended its line of Thomas S. Moore extended-finish bourbons with four new releases.

These include the individual finishes: Cognac, madeira, sherry and merlot.

To create these whiskeys, Barton 1792’s high-rye recipe bourbon aged for five to six years in new charred oak barrels before filling other casks that previously matured various wines or spirits from around the world. These whiskeys then rest for an additional one to four years.

“This second Thomas S. Moore release really reinforces that the extended aging is quite significant,” says Master Distiller Danny Kahn. “What we are seeing are complex, fuller textures being developed. Savory flavors and aromas are unquestionably enhanced and continue to develop in the secondary cask in ways that are very different from the primary barrel aging. The result is an elevated, premium collection unlike any other.”

The cognac barrels Kahn used generally held cognac for six or more years previously. The merlot barrels came from wineries in the Napa and Sanoma areas. The sherry barrels were all oloroso sherry. A variety of different types of madeira barrels were used.

Kahn created a few sub-blends for each expression. From there, the sub-blends were sorted based on categories of flavors from which the final blends were chosen.

Company-provided details for each of the whiskeys in this release are as follows:

  • Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Madeira Casks has scents of oak and madeira wine, the company reports, with hints of tobacco, citrus and dried fruits. The aroma follows through on the palate, adding sweetness and acidity. 96.5 proof.
  • Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Merlot Casks carries aromas and flavors of fresh fruit, including plums, raspberries and dark cherries, followed by floral notes. On the finish, light tannins and toasted oak. 93.3 proof.
  • Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Sherry Casks greets the nose with sweet fruit and toasted nuts, followed by figs, hints of spicy tobacco and cedar. The palate is sweet with fruits and nuts. 98.7 proof.
  • Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Cognac Casks has an aroma of fruit and citrus that mingle with slightly herbal notes and traces of jasmine and lavender. On the palate, notes of orange, apricot and vanilla give way to earthy undertones, with a toasted oak and cedar finish. 93.4 proof.

This line of bourbons intends to honor Thomas S. Moore, a bourbon pioneer who built the distillery known today as Barton 1792 Distillery. The tall bottles feature imagery that pays homage to the legacy of Moore. Each label displays the image of a racehorse, honoring one of Moore’s earliest whiskey brands, Belle of Nelson, named for the thoroughbred who won the Kentucky Oaks in 1878.

Suggested retail pricing for each Thomas S. Moore expression is $69.99 per 750-ml. bottle.

The Thomas S. Moore line originally launched in 2020.
