Barrell Craft Spirits today launched the latest offering in its Barrell Bourbon Cask Finish Series: P.X. Sherry.
Pedro Ximénez, often abbreviated as P.X., is a dessert wine from Spain, known for its rich sweetness. P.X. wines typically feature notes of dried fruits, velvety chocolate and toffee.
The BCS team blended straight bourbon whiskeys from Kentucky (9 and 10-year), Indiana (6, 7, 8 and 12-year), and Tennessee (7 and 15-year) before further maturation in P.X. Sherry barrels. The result is layers of toasted coffee, golden honey and candied fruit, the company reports.
Featuring a derived mash bill of corn (80%), rye (16%), and malted barley (4%), the new expression was bottled at cask strength (115.52 proof) in Kentucky. It is now available for purchase online via the BCS website at barrellbourbon.com and in retailers for the suggested retail price of $84.99 per 750-ml. bottle.
Previous cask-finished bourbons include Amburana, A Tale of Two Islands Rum Finish, Mizunara, and Ice Wine.
