The newest launch from High West is the company’s first-ever bottled in bond whiskey.
Bottled-in-bond is a designation that protects the integrity of aged spirits by ensuring each barrel is produced in a single distillation season by a single distillery. To meet the criteria, the spirit must also be matured in a U.S. bonded warehouse for at least four years and bottled at 50% ABV (100 proof). These rules originate from the Bottled-in-Bond Act of 1897, the nation’s first consumer protection law that protected people from drinking tainted whiskey.
High West Bottled-in-Bond has a mash bill of 80% rye and 20% malted rye. Bottled at 100 proof, its four years old in age.
On the nose is toasted brioche with spiced pear jam, oatmeal raisin cookies, English toffee, sweet rock candy, lavender flowers and dried ginger, according to distillery notes. The palate brings cooked apples with sage, toast sugar cookie, fresh grated nutmeg, cinnamon candies, cacao nibs and juniper spice. The finish is coconut caramel, center-tin pie crust and wildflower honey, all according to the distillery.
Available now nationwide, the suggested retail price is $79.99 per 750-ml. bottle.
